Now the spring is here. Beautiful weather in the 70 F . We enjoy this weather so much in SC they usually do not last long. Very soon the heat and humidity prevail and we have to turn the air conditioner on . Right now all the windows and doors are open .It feels so good.
This weather makes me crave for delicious light summer food.
They had a sale at the Pig for shrimp I decided to make
some shrimp in garlic and wine sauce.
It is really what most restaurants call " Shrimp Scampi" but if you know Italian you know that Scampi are big shrimp found in the Mediterranean ,so the name is a bit strange . I guess Scampi now stand for the garlic sauce.
well what ever the name, it will be delicious. I hope
Ingredients
2 or 3 tablespoons of olive oil
salt pepper
Your favorite Italian dressing
about 3/4 lbs fettuccine
2 cloves garlic
1 lb large shrimps
2 springs of parsley 2 springs of dill
1/4 cup of dried tomatoes
the zest from 1/2 a lemon
1/2 a glass of white wine.
a sprinkle of red pepper flakes
Directions
In a large pan of boiling water cook the fettuccine according to the directions
peel and devein the shrimp.
Marinate for a few hours in the Italian dressing
Clean and chop the garlic very fine
chop the tomatoes the parsley and the dill
In a medium pan heat the olive oil on medium heat.
brown the shrimp till they are pink about 5 minutes.
Brown them in batches do not crowd them
put on the side
In the same pan brown the garlic and the tomatoes
add the white wine
add the shrimps to the pan .
Add the parsley and the chives. and the lemon zest
keep warm.
When the pasta is done drain it( Keep some of the water to add to the sauce if needed)
Add the pasta to the shrimps.
.you could add a few red pepper flakes if you like it hot.
Add a slice of lemon and here you are. So fast and easy.
I make the same recipe without tomatoes but with cream and Parmesan cheese in the winter but this version is a lot better in warm weather.
you may want to use linguini instead of fettuccine actually I like it better but I used what I had in my pantry!
