Jamie Oliver is one of my favorite chef on line. His food is fresh and simple but bring in different ingredients. when I saw him on line making chicken wings Teriyaki I had to try the recipe.
It is the easiest simple recipe ever . it is one of his recipe from his book "5 ingredients- quick&Easy food"
It is very good to make for one person or 2 or for a bigger group.
Jamie call it "Sticky kicking wings" the name fits very well , it is very sticky and you can make it as hot as you want.
here is the recipe for 2 persons
ingredients
4 large free range chicken wings
2 tablespoons teriyaki sauce
1 fresh chili
2 spring onions.
Jamie added 1 tablespoon sesame seeds but sorry I did not have any . I had some poppy seeds but I did not know if it will be fine.
Method
Saute the chicken wings in a very hot pan. the wings should be snugly in the pan
brown a few minutes on each side
Add the teriyaki and the water just to cover the wings.
Halve the chili length ways add it to the pan . (I used only a quarter of the chili but you may use the whole chili if you like it hot.)
Cooked for about40 minutes till the chicken is tender and sticky. turn the chicken occasionally.
-Add a splash of red wine vinegar
Slice the green onion and scatter over the chicken
Good serve with steam rice
I had a serving of stuffedmozzarella mushroom on the side the whole thing was delish!

la poule au pot
I have two heros in the French history : Vercingetorix because he always looked so sexy on his pictures with his wild long hair and Henry the 4th because he was very tolerant for his time and he seems to care about his people.
I know you are going to wander what all this has to do with food. Vercingetorix not much. I don't know much about the Gaulois culinary taste. I learned in an old history book that they had feast were they eat so much they will get sick and will go on the back of the tent and will tickle their throat with feather and throw up so they could go and eat some more. yes sickening.
I was rather thinking about the good king Henry 4th of France (not the horrible one from England) who said every French man should have a chicken in the pot every Sunday. Meat every Sunday Oh La La!
When I was young it was still in the habit to have a chicken on Sunday most of the time roasted in the oven.
What I mean by the" Poule au pot " of" Henry the 4th" is a chicken simmered slowly with vegetables.
I like to simmer a chicken this way . First you get a delicious stock and then chicken you can use in a lot of different ways
Here is my recipe for boiled chicken and stock,
Ingredients
I nice large chicken preferably organic ( or 2 if you want to have more frozen chicken)
2 large carrots
2 branches of celery
1 large onion studded with a few cloves
1 leak
2 Bay leaves
a few branches of thyme and 1 branch of rosemary ( or a pinch of" Italian seasoning" or" herbes de Provence"
salt and pepper
Directions
Peel the onions and cut in quarters
clean the carrots and slice
clean the celery and slice
clean the leak and slice ( make sure you rinse the leak well it is very sandy)
Take the giblets out of the chicken and rinse the chicken
Put all the vegetables and the chicken in a large stock pan
Cover the chicken with water
Add the Bay leaves the herbs and the spices.
Bring to a boil if there is some foam forming on the top remove
bring the heat on low and simmer the chicken for about 2 hours
check for doneness by pulling the leg and make sure it is cook
When you are sure it is cook
Let the chicken cool down
Strained the chicken
keep the stock and let it cool
The stock
I freeze the stock in individual ice tray and then in plastic bags
and some in small plastic containers
so I have ready stock any time I need it

I have shred the chicken
I keep some in the refrigerator to cook right away and I freeze some in individual plastic bags for later use
I always keep the skin and a few part for my dogs they love it when it is "boiling chicken day)
I used the chicken stock in different way
in Italian wedding soup
to make risotto
to cook my grits and in a lot of different chicken dish including chicken pot pie and Pho
I used the chicken in a lot of different dishes
my favorites are
Chicken salad
chicken tetrazzini
Philadelphia chicken sandwiches
chicken pot pies
and quite a few other chicken dishes
I will enter all these recipes in following post

chicken with Maple syrup and cayenne
A few years ago my ex sister in law and friend Marsha came and visit me in SC from Maine . She brought me a beautiful bottle of real maple syrup. The bottle was in a shape of a maple tree leave and I kept it.
I made pancake and the syrup was delicious but I wanted to use some of the syrup in another way.
I research a few recipe and I found a very easy recipe made by Anne Burrell one of my favorite 'Food TV " chef. First I was not very exited about the recipe Maple syrup and Cayenne pepper chicken. I am not too much into sweet and hot usually but I decided to try it any how and it is now one of my favorite chicken recipe. I do not have maple syrup all the time it is rather expensive but when I went to Cosco and found a nice bottle of maple syrup for a good price I had to have it . and I decided to make my recipe "chicken in maple and Cayenne pepper"
Chicken with Maple syrup and Cayenne pepper
Ingredients
Cut up chicken
2 tbs olive oil
cup Maple syrup
2 tbs Cayenne pepper
Preparation
Turn on the oven at 400 degrees F
Rub the olive oil salt and pepper on the chicken parts
Put the chicken on a oven tray.
Cook about 20 Mns. the chicken must start to be brown and crisp but not completely cook.
While the chicken is roasting prepare the Maple syrup
In a small saucepan combine the syrup and the Cayenne pepper
on medium heat cook the syrup till it is 1/2 reduced and thick.
When the chicken has cook about 20 mns glazed it with the syrup mixture and let it cook about 15 mns longer.
This chicken is so easy to make and so delicious.
Notes
-Beware not to have a heavy hand with the Cayene pepper which is very hot.
-Do not over cook the chicken but make sure it is nice and brown
-The recipe is for about 4 persons.
-On this day I made my chicken for only one person and used 1 breast.1/4 cup Maple syrup and 1 tsp Cayenne pepper. -
I accompagned my chicken wth some Boyshoy from my son garden and a bake potatoe. I had some mild peppers left from my garden so I cooked one with my chicken
A table Bon appetit!

chicken pot pie
About 3 years ago I had given Jesse( my son a law) a special gift for Christmas: a certificate which promised chicken pot pie every month for one year. I did not always gave him one every month . I felt guilty so now 3 years after when I make chicken pie I have to keep one for him and one for Tricia.
I hope you will like my chicken pot pie as much as they do.
Usually when there is a good sale on chicken I buy two of them and poach them the day before I made chicken pie. The poaching process is easy. Put the 2 chicken in a pan cover with water, add salt, pepper, one onion, a few carrots one bay leave . bring to a boil and then simmer till the chicken are cook you can tell by pulling on the leg!
2 poached chicken give me enough chicken for different things may be a chicken salad, or chicken tacos or whatever I feel like to make. I usually give a nice treat to my dogs they enjoyed that very much. I can too freeze some of the meat for another day. And naturally I get the most delicious chicken broth. But you do not have to do all this you can use any type of chicken you want for the chicken pot pie , it could be left over roast chicken .
here is the recipe for the most delicious pot pie , very easy to make you will never buy a chicken pot pie again.
ingredients
4 cups chicken
1/2 cup onion
1 cup carrot
1 cup chopped precooked potatoes
1 cup corn
1 cup celery
1 large stalk of broccoli
2 cups chicken bouillon
1/2 cup cream
1 tb spoon" moutarde de dijon" or whatever mustard you like
3 tbls flour
3 tbs butter
pie crust. bought or home made
Preparations
Cleaned the carrots slice them
chopped the onion very small
clean celery and chopped it
chop the broccoli
cut the potatoes in small pieces and cooked in salted water. Drain
clean the mushrooms and slice.
in a large pan cook the carrots, onion,celery and mushrooms for about 10 minutes
add the broccoli cook for 5 more minutes.
Add the flour cook for a few minutes and add the stock
Cook for about 10 minutes making sure the flour is well cooked
add more stock if needed
.
.
add the potatoes, the corn, the mustard, the chicken. and salt and pepper. cook for about 5 minutes and add the cream.
put your filling in 4 small dishes or in a large oven dish .
prepare you dough and cover your pies.
brush the top of the pies with a beaten egg yolk
bake in the oven at 450 degrees F for 20 minutes or until golden
the individual pies can be frozen and bake when needed.

Serve your pie with a salad
a table. bon appetit.
