grilled salmon
It is easy to buy salmon just for one . You could by a fresh piece of salmon at your fish market or buy individually frozen fillet at your supermarket. I think the frozen salmons are as good as the fresh one but I think the wild salmons are a lot better than the farm salmons. But since the wild salmon is usually quite more expensive if you think some farm salmons are as good as the wild salmon let me know I will be happy to change my mind. Last week I bought some salmons at Bilo. Package of 2 individually frozen perfect for me. Since they were 2 for 1 it was a good deal. I cook salmon a lot ,sometimes twice a week so I cook it in a lot of different ways but the recipe I like the best is a plain grilled salmon with different toppings
.
grilled salmon.
ingredients
1 salmon fillet
enough Terriyaki sauce to cover the salmon
lemon
salt and pepper.
Instructions
marinate the salmon fillet in theTeriyaki sauce at least one hour.
heat a grill . (Since for myself I do not want to start a barbecue grill I have a small electric grill on my porch . it is very practical.)
place the salmon on the hot grill and cook for 8 to 10 minutes till the fillet is opaque throughout.
squeeze some lemon on the fillet and serve with your favorite topping.
Note : you could make your own Teriyaki sauce but Kikkoman make a very good teriyaki sauce I always have some in my refrigerator it is a good marinade for grill chicken too.
Next are a few toppings I use on my grilled salmon you could use a few other one here again have fun use your imagination.
Yogurt sauce
ingredients
1/2 cup plain yogurt
chopped shallot
parsley or dill
lemon juice
salt and pepper
Instructions
in a bowl mix all the ingredients
serve on the top of the salmon
Roasted pepper sauce
ingredients
2 roasted red bell peppers
2 garlic cloves
2 tbs spoons olive oil
a little water
salt and pepper
Instructions
Put all the ingredients in a blender. and blend till it is emulsified.
serve on the top of the salmon
Note: for one person I could have use only one bell peppers but that sauce is so good I like to make enough . It can be kept in the refrigerator for at least a week.
with my grilled salmon I like to serve a dish of couscous and a green salad.
A table et bon appetit.
bruschettas of tomatoes
I love to cook ,cooking always perks up my mood .( My daughter says it is because I always have a glass of wine while I cook. Most of the time I do.)
Sometimes I get lazy or I am doing some thing else and I don't want to cook. No problem at this time of the year there are always delicious tomatoes in my refrigerator that were bought at the road market.
So very often it is tomatoes bruschettas for me. easy and Delicious.
Ingredients
1 tomato
1 clove of garlic
olive oil
4 nice slices from a french baguette.
a few leaves of basil
salt and pepper
Instructions
open the tomato take some of the seeds out .
chop the tomato in small cubes
smash the garlic clove, take of the skin and chop finely
chop the basil
put tomato garlic and basil in a bowl
add salt and pepper
cut on the diagonal 4 slices of bread ( or more if you are hungry)
spread the bread with olive oil
put under a broiler till golden brown
top the bread slices with the tomatoes mixture.
for accompaniment I like a bowl of homemade soup .
these simple bruschettas are so easy to make but naturally you may add different toppings. avocado puree. goat cheese . children like ham and Cheddar. Use your imagination.

Too day dinner: grill shrimp dinner for one person.
This is a dinner that doesn't cost any effort or time and it is very ligth and easy to eat for the summer
if you can get fresh shrimp by all mean use fresh shrimp. Around here I have not always been very please with the fresh shrimp I bought. I buy packages of individualy frozen shrimps. Very often they are "bogo" so that is a good deal. The advantage of this bags of shrimps is that you use only how many you need and keep the rest frozen.
I have been very often disastified with grilled shrimp will it be my one cooking or some one else. too me they are always too dry it is difficult to cook them properly. In this recipe the shrimp stay moist because of the coating of mayonnaise.
grilled shrimp.
Ingredients
Shrimp (as much as you want to eat)
terriyaki sauce
mayonnaise (enough to coat the amount of shrimp you are going to use)
some fresh herbs chopped very fine (you could use some dry herbs or a blend like" Herb de Provence" )
a few cherry tomatoes (enough to alternate with the shrimps on the skewers)
Soak a few wood skewers in water for a while
placed your shrimp in a bowl cover them with terriyaki sauce and let marinate a few hours.(if you use frozen shrimps they will thaw during that process)
in an other bowl mix the mayonnaise with the herbs add salt and pepper
get your grill hot
Put the shrimp in the bowl with mayonnaise and coat each of them.
thread shrimp on skewers alternating with cherry tomatoes.
put on hot grill
Cook shrimp about 5 minutes on each side
I serve the shrimp with rice.
A glass of Sauvignon blanc will good with that.
A table et bon appetit!!!
.Note: My editor (my daughter) told me that shrimp never take a S for plural . It is awful I had never notice. Well it is corrected thank you Tricia
