tomatoes and goat cheese tart.

in the summer I like to make  tarts and eat then with a nice salad . But in the winter they are  a very nice accompaniment for soups. this one is so easy to make and if you are eating by yourself it freeze very well

ingredients

I stalk of leak
2 tomatoes
goat cheese
1 clove garlic
parmesan.
fresh thyme
1 package flaky pastry from Pilsbury

Directions

Thaw one sheet of the ready to bake flaky dough as instructed on the package
Butter and flour a pie dish.
 When the dough is thaw
roll it to the size of your pan
Spread the dough in the pan and pick it with a fork so it does not swallow to much when cooking.

Clean the leeks making sure you get rid of all the sand.
Slice the leeks
"Saute" the leeks in the 0live oil till they are wilted.
Add the garlic "saute" a few more minutes.
slice the tomatoes.
Put the leeks over the pie
add the slice tomatoes
crumble the goat cheese over.
add salt and pepper and the thyme and sprinkle olive oil on the whole tart.
put in a preheated oven at 350F
