The Basque country is another lovely part of France but I must say I haBe never visited it. Like a lot of counties in France they have interesting traditional recipes . Chicken basquaise is one of them. specialty comes from the Basque Country, between sea and mountain, between France and Spain, at the heart of the Pyrenees. I am so excited this is my first blog I am very inexperience but I am learning as I go along. these comments and tips are going to be mainly about little tips that make cooking easier. they will be tips from my friends family TV shows and other blogs and specially from my sister Brigitte who own a restaurant in La Colle France(leblancmanger) and who is an excellent chef

-keep nuts in the refrigerator or the freezer they get rancid easily

-I love risotto but it is time consumming to make . but you can cook you risotto till you add the last of the chicken stock and then freeze it. when you need the risotto heat it up add cream and cheese and whatever you want to add, wisk it and here you are!( from Brigitte)

-when you flour meat or vegetable for sauteing make sure you do it a the last minute or the meat will get soagy and won't fry properly( Anne Burrel one of my favorite chef)

- this week I got some Creme de Brie from Alouette. on toast or cracker it is delish!! try it..
